Well, Christmas has been and gone, and I hope you had a good one, with plenty to eat and drink. 
It's a bit of a nothing time between Christmas and New Year. What do you do? Maybe tidy up a bit after the fun of Christmas, do a bit of shopping for New Year, and relax, but what about the leftover food in your fridge? That won't keep till New Year.

Do you bin it, feed it to the animals, or do you do some cooking with any leftovers?
There are many things that you can make and even freeze for later in the year. 
Here is how leftover food should be dealt with to save an upset stomach!

Leftover Christmas food can be kept in the fridge for 3–4 days, or frozen for 3–4 months: 

  • Refrigeration

    To reduce the risk of food poisoning, you should eat leftovers within 3–4 days. The faster you cool and store food, the longer it will last, and the safer it will be to eat. 

  • Freezing

    If you don't think you'll be able to eat leftovers within 4 days, you should freeze them immediately. To freeze Christmas meats or stuffing, you can: 

    1. Wrap them in heavy freezer wrap 

    2. Put them in a container suitable for your freezer 

You can use up leftover Christmas food in a variety of ways, such as: 

  • Making cheeseboard mac 'n' cheese with a mix of cheeses like blue cheese, gruyère, and camembert 

  • Making cauliflower cheese, mac and cheese, or cheese, potato, and onion soup with crispy sage 

You can store leftovers in plastic containers, such as bags, collapsible food containers, locking plastic food containers, or glass containers.

Here are a few things you can do with leftovers that are easy to make. You will find loads of recipes online for using them up as well.

  • Spicy turkey ragu is a must-have, and it is a nice ragu sauce with leftover chicken or turkey in it.

  • Boil the turkey carcass, get all the meat off, and make stock for freezing

  • A pie with anything that is left over in it and can be eaten hot or cold. 

  • Ham and watercress soup or just ham and potato soup. 

  • Casseroles can be made with leftover meat

  • Or you can just freeze any leftover meat for eating later in the year.

So please don’t just bin it; do yourself a favour and have fun freezing or making stuff out of it and saving money as well.
