Cake, Glorious Cake!

Some of you may have got the impression that I like cake—well, I do!

Cakes—and I include gateaux and tortes in this—have been a treat for humans for a long time. Honey was used as a sweetener before cane sugar came along. The first cakes were little more than modified bread, but new recipes were developed as different ingredients became available.

I like a nice moist cake, so my two personal favourites are chocolate cake and apple cake. I am not a fan of very rich fruit cake like Christmas cake or wedding cake.
But with apple cake, it takes skill to prevent the chunks of apple from sinking to the bottom before the cake is cooked through.
